What you need

Unfrosted layers freeze beautifully. Frosted cakes do not, and every year somebody learns this the hard way in December.

How it goes

  1. Cool completely — a warm layer makes ice crystals, and ice crystals make a wet cake.

  2. Wrap twice in plastic, then once in foil. The foil is what stops the freezer smell.

  3. Freeze flat, never on edge, for up to four weeks. Label it, because you will not remember.

  4. Thaw wrapped, on the counter, three hours. Unwrapping it cold is what makes it sweat.

Contains wheat, dairy and eggs. Frozen four weeks is the limit used throughout; beyond that the texture goes, even wrapped well.

What people ask before they bake

Which six holidays?

Memorial Day, July 4th, Labor Day, Halloween, Thanksgiving and Christmas — the six where somebody is expected to bring a cake.

Can I start in the middle of the year?

Yes. Page 3 works from whichever holiday is next; the order is not the point.

Does freezing actually work?

For unfrosted layers, up to four weeks, wrapped twice and foiled — page 13 is specific about it. Frosted cakes do not freeze well and the book says so.

What if my family expects the same cake?

Page 16 is written for exactly that, and the answer is usually to change one element rather than the whole cake.

Do I need the other books?

No. Each holiday chapter has its cake written out in full.
